[CALUG] Encrypted filesystem in a file

There are numerous methods on how to create/mount an encrypted ISO
image on a filesystem.  Does anyone know if there's a way to create a
dynamically-sized read-write encrypted mount-point?  The Google terms
I use turn up everything but what I'm looking for.

Basically, I'm looking to be able to create a file that can be mounted
as an encrypted filesystem (like an ISO image).  I am NOT looking to
encrypt the whole filesystem.  It's basically an FS that is not only
secure but can also be copied or moved to other machines on a whim.

Any ideas?
