I'm a bit of an Ubuntu Linux noob, but I also had to do this to an old
Dell Laptop. I hooked it up to an overhead projector, and when I
disconnected it, the GUI couldn't recognize the laptop monitor. I had
to boot to command line, and do the same thing.
am I right when I say that linux treats display drivers like a "server"
in this mode?

turning off screen compositing meant that you weren't extending the
screen to a second monitor.

I know there's a new gui for gnome, KDE has had one at least since 7.10
(the oldest I know)

My problem was resolved. Using envyng works but one had to edit the
file
/etc/X11/xorg.conf
and in the extensions section change Enable to Disable:
Section "Extensions"
Option "Composite" "Disable"
EndSection
I have no idea what the above did. Does anyone know?
