Sean,
Try googling for 'pc to tv converter' or 'pc to tv adapter' and I think you'll
see what you are looking for. It sounds like you are looking for a video output
device, where the first link you sent is a video input device. That second link
you sent should do the trick, as well as something like this:

It has a VGA input and RCA and S-Video outputs for just $38. This is just a
pretty dumb converter and doesn't have or require any software, so compatibility
with Linux should be a non-issue. You would just have to use a screen
resolution that the box understands - typically 640x480 or 800x600 plus maybe
1024x768 and 1280x1024. Note that the resolution of a standard television is
much worse than that of a computer monitor, so regular sized text is sometimes
unreadable.
